recipes that finally made me buy a pressure canner
Not jam, not pickles. Only the low-acid stuff that legitimately needs 240F or it isn't safe to eat months later.
01
Plain chicken stock
No noodles or carrots added at canning time. Season it later when you cook with it.
02
Turkey stock
03
Chili con carne, with beans
Followed the Ball Blue Book base and it holds together fine after 90 minutes at 11 psi.
04
Chili con carne, no beans
05
Pulled pork in its own juices
Shreds itself basically. Dinner in 10 minutes on a bad week.
06
Dried black beans, plain
07
Dried pinto beans, plain
boring but i go through a jar a week
08
Refried beans
09
Beef stew, cubed
Cut the potatoes bigger than feels right or they turn to mush (learned the hard way).
10
Meatballs in tomato sauce
Didn't expect this to be canner-safe, sauce seemed too thick, but it's USDA-tested and the jar I reach for most on a bad week.
11
Split pea and ham soup base
still testing the ratio, will update
