dinner party timeline for six, working backward from 7pm

the order of operations that actually gets you to the table calm. built this after the third time I was still whisking something at 6:58.

The week before: pick one make-ahead main, not three ambitious ones
get it in writing on your own calendar, not just in your head

Two days before: order the wine and anything shelf-stable

Day before, morning: make dessert and anything that's better resting overnight
braises, doughs, marinades - basically anything that improves by sitting

Day before, evening: set the table
tomorrow's list gets shorter every task you move here

7am day-of: tidy the entryway and bathroom before you're busy

Noon: second grocery run for anything that wilts - herbs, the good bread

3pm: start the slowest thing on the stove or in the oven
work backward from when it needs to be done, not forward from when you started it. earlier than you think

4:30: chill wine, fill the ice bin
twice as much ice as feels reasonable

5:15pm - prep anything that reheats or holds: sides, dressing (not yet on the salad)

6:00: shower and change before you touch the kitchen again
this is the step people skip and then apologize for their hair all night

6:30: candles on, music low, pour yourself the first glass

6:50: put the appetizer out and physically leave the kitchen

7:00: guests arrive. if the main isn't ready, say nothing and refill glasses
