🌶️salsas i actually remake, ranked by how often

the salsas that survive more than a week in my fridge before i make a new batch. ranked, not a tour of styles

01
Rick Bayless's rustic roasted tomato salsa
roast the tomatoes until the skins actually blister, don't rush it
02
Tomatillo salsa verde (Bayless method)
(double it), it goes on everything within 48 hours
03
Pico de gallo / salsa mexicana
04
Salsa de molcajete (Diana Kennedy's method)
bought a molcajete just for this, mashed really does taste different from blended. trust the process
05
Chile de árbol salsa, blended
06
Chipotle in adobo blended with tomato
07
Charred salsa roja (tomato + árbol)
the one i make when i'm out of literally everything else and it still slaps
08
creamy avocado salsa verde
09
salsa macha (oil, chiles, peanuts)
took three tries not to burn the sesame seeds. keeps for weeks, might be the best thing here honestly. just a project so i skip it a lot
10
habanero salsa, just habanero onion and lime
not for guests, i mean it
