houston guy, done this more times than I can count. the bark is made or lost in one decision, not twelve

trim the fat cap to about a quarter inch, even all over
too thick and the rub never touches the meat, no bark forms where fat sits

salt and pepper only, coarse, applied heavy and even
sauce is optional and honestly if your bark's right you won't want it

smoke fat side up at 250-275F, don't chase a lower pit temp overnight

let the stall happen, don't panic and wrap early to speed it up
this is the mistake, the stall is exactly when the bark is finishing setting. wrap here and you get soft mush on the outside

wait until the bark is dark and set, usually around 165F internal, way past the stall starting

wrap in pink butcher paper, not foil, once the bark is actually where you want it
foil steams the bark soft right when you finally got it right. paper breathes, keeps the bark on point while still moving the cook along

pull around 203-205F internal, probe should slide in like butter, not a fixed number on a timer

rest at least 1 hour, wrapped, in a cooler if you're not eating right away
skipping this loses more moisture than any step before it
