☕green coffees forgiving enough for your first uneven roasts

ranked by how much they forgive a bad heat curve, not by cup score. learned most of this the hard way in a popcorn popper.

Brazil Cerrado (natural)

the training wheels bean. dense, forgives an uneven heat curve, this is where I started and where I'd tell anyone else to start

Sumatra Mandheling (wet-hulled)

basically roast-proof. hard to scorch, forgiving well past first crack

Guatemala Antigua

Colombia Huila (washed)

Costa Rica Tarrazu (washed)

predictable, good middle-density option once you're past total beginner

Mexico Chiapas

Ethiopia Yirgacheffe (natural)

everyone recommends this for the cup, but the density's all over the place within the same bag. scorched three batches before I noticed.

Honduras Marcala

India Monsooned Malabar

weird one, processed to be low acid and dense on purpose. roasts nothing like the rest of this list, first crack comes late and quiet
