the overnight country blonde recipe is the one I turn to when I don't trust my starter yet. clearest instructions of the bunch.

Tartine Bread - Chad Robertson
more meandering than Forkish's book but the basic country loaf method is the one I actually learned the fold technique from.

Bread - Jeffrey Hamelman
widest range of formulas here, reach for it when I want something that isn't a country loaf (feed it first, obviously)
